Fankhouser appeared in 23 NHL games, all with the Atlanta Thrashers, between 1999 and 2001, posting 4 wins and 12 losses with a 3.31 goals-against average and a .894 save percentage. The remainder of his professional playing career, which extended through 2009, took him through various minor leagues and to teams in Europe.
Following his playing career, Fankhouser moved into coaching. He served as an assistant coach for the Cincinnati Cyclones of the ECHL and later coached the Evansville Thunderbolts of the North American 3 Hockey League for one season.
