Abbey Levy grew up in Congers, New York, and built her foundation in the sport through Shattuck-St. Mary's, where she won three USA Hockey Youth National Championships. Before arriving in the PWHL, she spent two seasons at Minnesota State Mankato (2018–20), appearing in 56 games and recording eight shutouts, then transferred to Boston College, where her career culminated in a graduate season that set a program record.

At Boston College in 2022–23, Levy posted a .947 save percentage, which ranked second among all Division I goaltenders nationally and established a single-season program record. That season also brought her Hockey East Second Team All-Star recognition and a second consecutive semifinalist nomination for the NCAA's National Goaltender of the Year Award — she had received her first such nomination the previous season in 2021–22. She also served as Alternate Captain for the Eagles during that final year. Earlier, she had won the Bertagna Trophy as the top goaltender at the 2021–22 Beanpot Tournament.

In the summer of 2023, Levy claimed a gold medal with Team USA at the IIHF Women's World Championship. She was selected by New York in the eleventh round (64th overall) of the 2023 PWHL Draft. Her first PWHL start came against Toronto on January 5, 2024, and she recorded her first PWHL win against Montréal on February 21, 2024. In her second season with the Sirens, she appeared in two games — on December 22, 2024, against Minnesota and on May 3, 2025, against Montréal — totaling 33 saves and 76:52 minutes played.

On June 20, 2025, Levy signed a one-year Standard Player Agreement with the Boston Fleet through the 2025–26 season.
